the universal soy dipping sauce // yangnyeumjang

Sauces help the cook feed our perpetual hunger for stimulating sensations, for the pleasures of taste and smell, touch and sight. Sauces are distillations of desire.

the semi-universal soy dipping sauce

  • soy sauce – 4 Tbsp
  • sesame oil – 1 1/2 Tbsp
  • finely ground red chili pepper flake – a heavy sprinkling
  • toasted sesame seeds - a dash
  • green onions finely chopped (adds great color too) – one stalk 

 

  • optional:
    • rice wine or apple cider vinegar (cuts through the grease for fritters) – a splash
    • garlic – finely chopped

 

tip: experimentation highly encouraged

  • use as a dip for fritters
  • use for seasoning any hot noodle dishes with clear broth
  • use this dip as a seasoning for rice dishes that are steamed with oysters, soy bean sprouts, radish, or chestnuts...
